Transforming Sweet Potato into Toast
How to make air fried sweet potato
- Using a sharp knife or a mandoline slicer, slice the sweet potato lengthwise to make thin, 1/3 inch slices. Note that the slices should be thin, otherwise the proportion of sweet potato to the toppings would be more and that doesn’t taste as great compared to thin slices when fried. The mandoline does a better job at giving more even slices.
- Season the slices with olive oil, salt, pepper and turmeric. I used coarse sea salt. That said, you can use regular salt too.
- Set the temperature in the air fryer to 350 ° and the timer to 10 minutes.
- Air fry the sweet potatoes.
- Let the fried potato cool in a wire rack.
- Enjoy with desired toppings.
I made it in 5 delicious ways. All of that takes less that 5 minutes to set up once you have the toppings ready.
- A spread of cream cheese and toppings like berries and pomegranate.
- Masala egg scramble topping with a dash of ketchup.
- A spread of cream cheese and olives and pickled jalapenos.
- A combination of pesto, mozzarella, cherry tomatoes and basil.
- And who can resist peanut butter and bananas?!
I experimented with 3 different types of sweet potato – the garnet sweet potato, the stokes purple sweet potato and a Japanese variety of sweet potato with a pale yellow flesh. Having done that, for this particular recipe I found out that the texture of the purple sweet potato toast came out the best.

Sweet potato toast
These air fried sweet potato toasts are quick and healthy. It is very versatile and can be served with desired toppings.
Ingredients
- 2 large, purple, sweet potatoes (easy to make into toasts)
- Salt to taste
- Pepper to taste
- 1/2 Tsp. turmeric
- 2 Tbsp. of olive oil
- Desired toppings
Instructions
- Using a sharp knife or a mandolin slicer, slice the purple sweet potato lengthwise to make thin, 1/3 inch thick slices.
- Season the slices with olive oil, salt, pepper and turmeric.
- Set the temperature in air fryer to 350° F and the timer to 10 minutes.
- Air fry the sweet potatoes.
- Let the sweet potatoes cool on a wire rack.
- Enjoy with desired toppings
Notes
For this recipe, I used 3 types of sweet potatoes and found that purple, sweet potatoes came out the best.
You can also bake the purple sweet potatoes in the conventional oven for around 20 minutes till it is tender, although I prefer the air fried sweet potatoes.
The toast can be made sweet or savory by the addition of desired toppings.
You can use the left over part of the sweet potato in other dishes. I make curries out of this.
