Sweetened with dates, fragranced with rose petals and nuttiness from the pistachios and walnuts, these delicious treats are very healthy. These fragrant energy balls are loaded with healthy fats from the pistachios and walnuts and are super simple to make. Simply coarse blend all the ingredients until the mixture crumbles and holds together when rolled.
When choosing dried rose petals for the recipe, make sure you get the edible rose petals. I got mine from a natural product store, but you can also get them at Amazon. Adjust the sweetness to your desired level to adding more or less dates. If you don’t have rose water, you can also use rose essence which is more concentrated, so 1- 2 tiny drops will be good. Take care in ensuring that the rose flavor isn’t overpowering the recipe, since it could be very strong if not used in proper amounts.
How to make this rose pistachio and walnut energy balls
Soften the dates by soaking them in hot water.
Blend the soaked dates with the rest of the ingredients until it reaches a coarse consistency in a high-speed blender (Add about 1/2 – 1 tbsp. water from the soaked dates if the mixture appears dry).
Transfer the mixture to a bowl and then roll them into 3/4 – 1-inch balls. Refrigerate until firm. Enjoy!

Ingredients
- 4 dates
- 1 tbsp. dried rose petals
- 1/2 cup pistachios
- 1/4 cup walnuts
- 2 tbsp. almond meal
- 1/8 tsp. rose water
- sprinkle of salt
- 1/2 tbsp of water
- 1 tbsp powdered pistachios
Instructions
- Soak the dates in hot water for 10 minutes. This will bring the moisture back to the dates.
- Blend the soaked dates with the rest of the ingredients until it reaches a coarse consistency in a high-speed blender (Add about 1/2 - 1 tbsp. water from the soaked dates if the mixture appears dry)
- Transfer the blended mixture to a bowl and then roll them into 3/4 - 1-inch balls. Roll the balls in powdered pistachios.
- Refrigerate until firm.
- Enjoy!
