This orange almond cake needs jsut a few ingredients and is so easy to make. I always have loved a simple, fuss free cake and this delicious cake makes it to the list!
I love oranges and this cake is packed with orange flavor or you can say, it’s full of vitamin C from the generous amount of orange Zest and the Orange Juice used in the recipe. This recipe uses a simple glaze made from orange juice and maple syrup, which is brushed on to the cake while warm to absorb the flavors better. You can serve the cake with whipped cream and sliced oranges.
You can use coconut whipped cream too, by chilling one coconut milk can in the refrigerator (not the freezer) overnight and scooping the thick top portion of the coconut cream, beating this cream using electric mixer with chilled beaters. Add 1 tsp. vanilla extract and desired quantity of sweetener and whip well again. Use this cream to garnish the cake, it tastes so much better with whipped cream or whipped coconut cream.
This delicious healthy orange cake will make a beautiful festive dessert, decorated with sliced oranges and pomegranate arils, which is entirely optional.
How to make this delicious Almond Orange Cake
Gather all the ingredients.
Separate the egg yolks and egg whites in two separate, clean glass bowls. In a bowl, whisk together the almond flour and baking powder. Combine maple syrup, orange zest, orange juice, vanilla and cardamom to the egg yolk.
Mix Well. Stir almond flour mixture into the yolk mixture.
Whip the egg whites using a hand mixer until it is frothy. Add salt and white vinegar and continue to whip on high speed until the egg whites reach the soft peak stage. Set aside.
Fold the whipped egg whites into the almond flour gently in batches until everything is incorporated into the mixture (make sure you fold in the egg whites in batches and do not whip vigorously).
Preheat oven to 325 F and line a 9-inch cake pan. Grease the pan and pour the prepared cake batter into the pan. Bake at 325 degree F for 40- 42 minutes until done. Insert a fork to see if it comes out clean. While the cake is baking, whisk together maple syrup and orange juice. Once the cake is done, brush the warm cake with the maple orange glaze. Enjoy with fresh whipped cream and sliced oranges and pomegranates.

Ingredients
- 1 and a half cup finely blanched almond flour
- 1 tsp. baking powder (or 1/4 tsp. baking powder)
- 1 tsp. white vinegar
- 1/4 cup maple syrup
- 4 eggs, yolk and white separated
- 2.5 tbsp. orange zest
- pinch of salt
- 1 tbsp. orange juice
- 1 tsp. vanilla extract
- 1/4 tsp. cardamom powder
- For the glaze:
- 2 tbsp. maple syrup
- 3 tbsp. orange juice
- To serve:
- Whipped cream, cut oranges and pomegranates seeds (Optional)
Instructions

Notes
Make sure the glass bowl is very clean before you whip the egg whites, else the egg whites won't whip.
