Who doesn’t love Mediterranean food? Mediterranean cuisine is considered one of the healthiest of all. Not only is it nutrient dense by incorporating a lot of vegetables and heart-healthy, extra virgin olive oil but it also tastes delicious. I am not surprised that it has become so popular.
I have loaded this Mediterranean pizza recipe with some delicious toppings like artichokes, olives, capers, sun dried tomatoes… ok enough said, you will definitely devour this pizza!
What kind of Pizza crust should I use?
You can use a regular pizza crust, a cauliflower pizza crust or an almond flour pizza crust, whichever you prefer. But be sure to check the cook times in the package instructions as it may vary based on the pizza.
What makes this delicious Mediterranean pizza healthy?
- This pizza recipe doesn’t use all that extra cheese. I have instead made it with a delicious cashew cream sauce which is super nutritious.
- You can get creative with this pizza, adding extra vegetables or toppings to the pizza base as per your preference.
- I don’t see this pizza only as an occasional affair, it can literally be had everyday as it is very healthy.
What goes inside the spicy cashew sauce?
I make the spicy cashew sauce with cashews, jalapenos, coriander etc. which makes it a delicious nutritious substitute to cheese.
You can save up the extra cashew sauce in a fridge and add it to pasta and any sort of stir fried dish or maybe use it as a sandwich spread, as a topping. This makes everything delicious.
Step by step method to make this delicious Mediterranean pizza
Place cashews in a bowl of hot water and let them soak for about 1 hour. Drain and rinse.
In a high-powered blender, blend the cashews and the rest of the ingredients for the cashew sauce until the blend is smooth.
Preheat oven to 400 degree F. Layer the Pizza base with the spicy jalapeno coriander cashew sauce. Sprinkle black pepper. Top with sun dried tomatoes, artichokes, olives, and mozzarella shreds.
Bake in the oven for about 15-16 minutes. Top with cherry tomatoes, basil leaves and seasonings as per preference. Enjoy!
Loaded Mediterranean Pizza
This loaded Mediterranean pizza with a spicy cashew cream base is easy to make, super healthy and tastes delicious
Ingredients
- For the spicy cashew sauce:
- 2 cups raw cashews
- 1 Tbsp. minced garlic
- 1 Jalapeno sliced and seeds removed (Take 1/2 jalapeno if you prefer it less spicy)
- 10 Sprigs of coriander
- Juice of 1 lemon
- 2 Tbsp. Extra Virgin Olive Oil
- 3/4 cup water
- 2 Tbsp. White Vinegar
- 1 Tbsp. Miso sauce (optional)
- Salt (as per taste)
- For the Pizza:
- Pizza base (as per preference)
- 1/2 cup red onion sliced
- 1 cup artichokes hearts
- 1/2 cup sliced and pitted olives (I used green olives)
- 1/2 cup chopped sundried tomatoes
- Mozzarella Shreds (according to preference)
- 1/2 cup cherry tomatoes
- 8-9 fresh basil leaves
- Salt, pepper, red chili flakes, dried thyme, oregano, capers to season the Pizza (as per taste)

Notes
You can substitute salt with black salt (for that extra umami flavor)
You can get creative with the cashew sauce to make it more healthy, add sautéed vegetables like spinach to make it more healthy. Or make it more spicy by adding sriracha sauce!
Refrigerate the extra cashew sauce to add to pastas, stir fried vegetables etc. Use within 3-4 days
