This easy, healthy, creamy jalapeno potato salad can be made in less than 20 minutes and is made with Greek yogurt as well as delicious additions like jalapenos and spices. It is flavor packed and makes for a delicious side dish.

Unlike the conventional potato salad which is made with gobs of sour cream/ mayo, this much healthier version is made with Greek yoghurt and flavored with spices and pickles. This recipe is vegetarian and gluten free, at the same time it is super simple to make.
The probiotic-rich, Greek Yogurt is thicker, has less sugar and high concentration of protein when compared to regular yogurt, and lends the classic creaminess to the salad. The slight tang from the Greek yoghurt is a flavor enhancer.
Use Yukon Gold or Round Red Potatoes for this recipe, the starchy varieties like russet potatoes won’t hold up during cooking.
Spices& Pickles for Jalapeno Potato Salad Recipe
This recipe uses cumin, coriander and black pepper to enhance the flavor profile of the dish. I toasted the spices, then ground and added them to the dressing for the potatoes. For this recipe, I used the USDA-certified organic, Primal Palate Whole Peppercorns and Primal Kitchen Avocado Oil Mayo.
Pickled Jalapenos and capers are added to give the salad a rich, spicy, tangy flavor which feels like a dance party on your palate. Finely diced carrots and onions add the crunch factor.
Step by step method to make this Jalapeno Potato Salad Recipe
Gather all the ingredients. Wash, scrub and chop the potatoes.
Steam the Potato in the Instant Pot. (If you don’t have an instant pot, you can also boil the potatoes on stovetop until they turn tender)
Toast the coriander seeds, cumin seeds and peppercorns and then grind the toasted spices.
Make the dressing: Blend greek yoghurt, the juice of half a lime, lime zest, mayo, pickle juice and salt in a high speed blender.
Pour the dressing over warm boiled potatoes. (Pouring the dressing over warm potatoes helps them better absorb all the flavors)
Top with pickled jalapenos, capers, sliced olives, onions, carrots, cilantro and ground spices.
Give everything a nice mix, garnish with lime zest and keep in the salad in the refrigerator for at least 30 minutes .
Enjoy cold.

This easy, healthy, creamy potato salad can be made in less than 20 minutes and is made with Greek yogurt and delicious additions like jalapenos and olives.
Ingredients
- 3 Yukon Gold Potatoes or 3 Round Red Potatoes
- 1/4 cup Greek Yoghurt
- Juice of half a lime
- Zest of half a lime
- 1 tbsp. Olive Oil Mayo
- 2 tbsp. Pickled Jalapenos
- 1 tsp. Jalapeno Pickle Juice
- Salt (if needed, to taste)
- 1 tbsp. capers
- 1 tbsp. sliced green olives
- 1/2 tsp. coriander seeds
- 1/4 tsp. cumin seeds
- 1/2 tsp. peppercorns
- 2 tbsp. finely chopped onions
- 1 tbsp. finely chopped carrots
- 2 tbsp. finely chopped cilantro
Instructions
Wash and scrub the potatoes clean.
Chop the potato into one and a half inch chunks.
Pour 2 cups of water into the instant pot and place a trivet inside. Place the chopped potatoes in a steamer basket and place the basket on the trivet.
Pressure cook the potatoes on high pressure for 9 minutes and quick release the steam.
Toast the coriander seeds, cumin seeds and peppercorns in a heated pan for 2-3 minutes and grind the toasted spices.
Make the dressing: Combine Greek yoghurt, juice of half a lime, lime zest, mayo, pickled jalapeno juice and salt (if needed) in a high speed blender.
Combine the dressing with the warm boiled potatoes.
Top with pickled jalapenos, capers, sliced olives, chopped onions and carrots, cilantro and ground spices.
Give everything a nice mix and keep in the salad in the refrigerator for at least 30 minutes .
Garnish with lime zest and enjoy cold.
Notes
If you don't have an instant pot, You can also boil the potatoes on stovetop until they turn tender.
Pouring the dressing over warm potatoes helps them better absorb all the flavors.
Do not use starchy potatoes like russet potatoes as they won't hold up during cooking.
