This breakfast oat waffles recipe is made with minimal ingredients and is very healthy. It can be made in a time crunch and tastes delicious, so much so that it can be an option beyond breakfast. I have paired these healthy waffles with a delicious mango compote.
I have been obsessed with my new waffle maker. It is so useful in a time crunch that its use has steadily increased during the quarantine. Waffles have always seemed intimidating to me. The process appeared complicated, but making waffles at home quickly changed this notion . They are in fact quick and easy to whip up.
Ingredients in these healthy waffles recipe
This healthy recipe makes use of minimal ingredients like oats, banana, oat milk (or any unsweetened milk you have handy), and common ingredients like baking powder and vanilla essence. If you prefer your waffles a tad sweeter, you can add your sweetener of choice. I added my favorite coconut sugar from Madhava Foods. They are continuously tested by The Clean Label Project to check for the presence of more than 200 contaminants including heavy metals (lead, arsenic, mercury), pesticides and insecticides (including glyphosate).
This delicious waffles pairs so well with a delicious summer mango compote. You can also replace mangoes with berries to make a quick compote. My mango compote recipe just uses mango and sweetener. For a slight hint of tanginess, you can also add some lemon juice, but I preferred the not-so-tangy version.
How to make this quick healthy Waffles.
- Dry Ingredients – Add Old fashioned rolled oats, baking powder and coconut sugar into a blender or food processor and blend to a flour-like texture. Transfer to a bowl
- Wet Ingredients – In the same blender, add banana, vanilla essence, milk of choice and make a smooth puree.
Combine the wet ingredients and dry ingredients and let the mixture sit for 5-7 minutes to thicken.
Ladle the batter into a preheated waffle iron and cook until crisp and golden. Enjoy immediately
How to make Mango Compote
Cut 1 ripe mango into small slices and transfer them to a small saucepan, keep the heat to low medium and add desired sweetener. You can also choose to avoid sweetener. Add 2 Tbsp. water and simmer for around 10 minutes. Use a handheld blender to make a chunky or smooth mixture as desired.
Enjoy the waffles topped with some mango compote and cut seasonal fruits.

Ingredients
Mango Compote
- 1 ripe mango cut into small chunks
- 1/2 tbsp. monk fruit sweetener (or sweetener of choice)
- 2 tbsp. water
Oat and Banana Waffles
- 1 Banana (peeled)
- 1 cup Old fashioned rolled oats
- 3/4 cup Oat milk
- 1/4 tsp. vanilla essence
- 1/4 tsp. baking powder
- 1 tbsp. coconut sugar (or sweetener of choice)
Instructions
Add Old fashioned rolled oats, baking powder, coconut sugar into a blender or food processor and blend till you get a flour-like texture. Transfer to a bowl.

Prepare the compote in advance and enjoy with the hot waffles.
Notes
You can also sweeten the mango compote with maple syrup, however do note that it lends a maple flavor to the mango compote. Use monk fruit or regular sugar to retain the flavor of the mango.
