This salad with a chickpea dressing can be had on its own or on toasts (Yes that works!, I added a tiny bit of chili oil too), or rolled into wraps – any which way your heart desires.
What are green tomatoes and are they the same as tomatillos?
Except for some heirloom tomatoes which are green when they are ripe, green tomatoes are for the most part unripe tomatoes. According to this article, sometimes green tomatoes are intentionally picked before they ripen. But more often, they’re simply tomatoes that didn’t ripen by the end of the growing season. This is why they’re commonly seen in late summer and early autumn. As soon as the temperatures drop to where the tomatoes on the vine no longer ripen, it’s green tomato season.
While green tomatoes and tomatillos may look the same and are both members of nightshade family, tomatillos are fruit of a different plant and are covered in papery husks. Green tomatoes are firm and astringent, and can be found in supermarkets late summer. I found mine at Whole Foods and they were firm and dense, as compared to ripe tomatoes.
Step by step method to make the Green tomato salad with chickpea dressing
Wash and slice the green tomatoes into half moon slices.
For the dressing, in a small saucepan, heat 1 tbsp. of your preferred oil. I used the Primal Kitchen brand of high heat avocado oil which tastes great on its own. Once the oil has heated, add the sliced red chilies, shallots and garlic. Thereafter, sauté for a few minutes until a nice aroma is released. Transfer toasted chickpea flour to a small bowl, add the sautéed red chilly, shallot, garlic mixture to the chickpea flour and add salt to taste. Add sesame oil, lime juice and date syrup to the the chickpea mixture. Combine well. Taste the dressing and adjust salt and date syrup as per taste.
Pour the dressing over the cut tomatoes and mix well.
Top with sesame seeds, toasted peanuts and chopped coriander.
Enjoy immediately, the salad may turn watery if left to sit too long.
