I find it easy to dress up or down this deviled eggs with relish recipe based on the occasion! This easy deviled eggs recipe is perfect for Easter, holidays, potlucks and other gatherings. That said, you don’t need a reason to make them, they can be added to your weekly menu because…they are so good!!

How to boil the eggs for the best deviled eggs?
You can make the boiled eggs either in an Instant Pot or on the stove top. Here is the perfect method to cook boiled eggs on the stovetop.
I used the instant pot method to hard boil the eggs. It consists of a few simple steps:
- Place the eggs inside a rack in a 6 quart Instant Pot (1.5 cups for an 8 quart instant pot).
- Pour 1 cup of cold water and seal the lid.
- Cook on high pressure for 5 minutes.
- Let the pressure naturally release for 5 minutes and then do a quick release.
- Let the eggs sit in a ice water bath for 5 minutes and then peel the eggs.
How to make Easter-themed deviled eggs?
This recipe can be dressed up by making a colored, hardboiled Easter egg! This immediately became a fun project for my daughter A. This can be made into a fun Spring activity for the kids with a delightful, healthy, treat afterwards.
- Peel the boiled eggs, slice them lengthwise, and separate the whites out by removing the yolks.
- Get mugs for the different colors you want to use.
- Fill the mugs with 2/3 of the way with water.
- Add 5-6 drops of the desired food coloring along with 1 tsp vinegar to the water to dye around 5 egg whites. I found that by varying the amount of color added and the length of time the eggs sit in the dyed water, the intensity of the color can be varied.
- Transfer the egg whites to a paper towel to let them dry and drain out.
Note : I used plant based dyes from Whole Foods to get the desired colors. It turned out that the color red produced a purple color and green produced a lightly yellowish color. With gentle, plant based dyes, it takes much longer to get the color in ( the objective being not to get harmful harsh dyes into our body).
You can also use edible dye components like red cabbage, turmeric, beets, cranberry juice, onion peels etc. to get desired color. That said, these may not produce the exact color you are hoping for.
Step by step instructions for the best deviled eggs with relish
- Gather all the ingredients
- Separate the egg yolks from the egg whites. Mash the egg yolks with the back of a spoon or a fork
- Lightly toast all the spices (onion, garlic, ginger, coriander, turmeric, chili and gram masala) on low heat in a sauce pan for a few minutes. Make sure that you don’t burn them.
- Add the toasted spices to the egg yolks. Add in the mayo, finely chopped onions, carrots, jalapenos and the tomato paste
- Give everything a nice mix
- Use a piping bag or a spoon to dollop the mashed mixture on to the egg whites
- Garnish with capers, chopped coriander and a light dash of chili powder
- Enjoy!

- 1/2 jalapeno finely chopped ( seeds removed)

- 1/2 tbsp. finely chopped carrots (optional)
- 1 tbsp. chopped coriander (to garnish)
- capers (to garnish)
- Salt (as per requirement)

Notes
Taste the mashed mixture to see if you need to add salt, then add accordingly.
