This dairy-free, mango pudding is a healthy, delicious, dessert that is light and refreshing, and take justs a few minutes to make. Made with very few ingredients, it is the perfect summer treat!
Mangoes are the quintessential summer fruit, loved by all, and the favorite fruit of many! Biting into this King of Fruits can be pure bliss – luscious and juicy. I believe that no one can get tired of eating mangoes, but if you are in the mood for trying something with mango that doesn’t bog you down with all that added dairy and extra fat, but is light and delicious, then this is the perfect dessert!
Ingredients in this Creamy, Mango Pudding
This healthier version is light and creamy, and you will be delightfully surprised at how easy it is to make. Coconut cream imparts the perfect texture to this pudding and mango puree add that refreshing mango flavor.
While picking a mango puree, go for a brand that is organic and doesn’t use any preservatives or added sugar. I love using the Pure Indian Foods Alphonso mango puree which is delicious and of great quality. You can also use the 24-Mantra no added sugar, organic, mango pulp which you can locate at the Indian stores.
Mint is added that lends a refreshing taste to the pudding and the addition of fresh pistachios perfectly balances out the pudding with its nuttiness.
How to make this Pudding
Add mango puree, coconut cream, sugar, cardamom powder and muddled mint leaves to a mixing bowl. Whisk everything well with an electric whisk until it has a rich, creamy, consistency.
Prepare the gelatin mix. Add the gelatin mix immediately to the mango, coconut cream and mint mixture and whisk again well. Pour into serving glasses. Fill halfway and add some crushed pistachios. Fill the remainder and keep the serving glasses refrigerated for an hour
Top with mango puree, chopped mangoes, crushed pistachios before serving. Enjoy cold.
Dairy- Free Creamy Mango Pudding
This healthy, delicious mango dessert is light and refreshing, and takes a few minutes to make. Made with very few ingredients, it is the perfect summer treat!
Ingredients
- 1 cup mango pulp or puree (no sugar added)
- 1 cup coconut cream
- 3 tbsp Sugar or 3 tbsp Lakanto Monk Fruit Extract (for a healthier option)
- 1/8 tsp cardamom powder
- 1 packet unflavored Gelatin
- 5-6 mint leaves
- As toppings - 2 tbsp. mango puree, 1-2 tbsp. chopped pistachios, 2 tbsp chopped mangoes
Instructions
Add mango puree, coconut cream, sugar, cardamom powder to a mixing bowl.
Muddle mint leaves in a separate small bowl and then add it to the mixing bowl.
Whisk everything gently with an electric whisk until it reaches a rich creamy consistency.
Bring 1/2 cup of water to a boil. Take a small bowl and add the unflavored gelatin to the bowl. Add the boiling water to a bowl and whisk together the gelatin and water until the gelatin completely dissolves.
Add the gelatin mix immediately to the mango, coconut cream and mint mixture and whisk again well until the gelatin mixture is well incorporated.
The mixture will be thin at this point (It will thicken up as it is refrigerated)
Pour into serving glasses. Fill glasses halfway and add some crushed pistachios. Fill the remainder and keep the serving glasses refrigerated for an hour
Top with mango puree, chopped mangoes, crushed pistachios before serving.
Enjoy cold.
Notes
Substitute Gelatin with Agar Agar for a vegan option.
Adjust sugar as needed. Add more sugar if needed.
