Chia Seed Nutrition
For those who are not familiar with chia seed, this tiny superfood has become a staple in many healthy households for the right reasons. Chia seed is an edible seed that comes from the desert plant Salvia hispanica, that has its origins dating back to Mayan and Aztec cultures.
The name “Chia” translates to Strength and though tiny, these black and white seeds are a concentrated powerhouse of healthy nutrients.
According to this Healthline article, Chia seeds provide insoluble fiber which helps keep you feeling full longer. Compared to flax seeds, chia seeds have much more Omega-3 fatty acids and are a rich source of antioxidants.
How does chia seed pudding taste like?
Chia seed takes in the flavor of the ingredients they are mixed in, in this case it would be coconut milk and mango puree. As such, they have a very neutral flavor.
How to make this coconut seed pudding with tropical fruits
Gather all the ingredients required to make the chia seed pudding. This would be 2 Tbsp. Chia seeds
1 Tbsp. + 1 Tsp. coconut sugar, 1/2 cup thick coconut milk,1 small mango or 1/4 cup mango puree
1/2 cup pomegranate seeds and 1 tsp nut and seed powder. Here is the recipe for this Omega-3 rich nut and seed powder.
Pour coconut milk into a mixing bowl. Add in chia seeds and coconut sugar and give everything a nice mix.
Place the mixture in the fridge to set, for at least 1 hour to overnight.
Make the mango puree by blending the flesh of 1 mango in a food processor. You can also use store-bought mango puree. I particularly like this brand, it is made of alphonso mangoes, and comes in a glass jar.
Now start layering the pudding. Take a clear glass jar for that stunning-looking pudding. Take the set chia seed pudding and spoon it into the jar. Top with a layer of mango puree and a few pomegranate seeds and finally with the nut and seed powder mix. Continue to layer.
Enjoy immediately or place in the fridge to enjoy later.

Notes
You can replace coconut sugar with a sweetener of choice. This can be maple syrup, monk fruit sweetener etc.
You can make a puree using fresh mangoes or use Pure Indian Foods mango puree. It tastes amazing and comes in glass jars.
You can also substitute coconut milk with any other plant milk of choice
