This delicious cashew coconut fudge is super easy to make and tastes delicious. Made with a base of cashew butter and coconut flakes and then topped off with white chocolate flavored with rose extract, this delectable decadent, layered dessert takes a few easy steps to prepare.
When I made this dessert, I was confused as to what to call it because this is not the traditional fudge recipe made with a lot of butter and cream. This creamy indulgent fudge is made with healthier ingredients like coconut milk and cashew butter flavored with rose and cardamom giving it a rich, luxurious, feel.
Did I mention that it is super easy to make? All you need to do is throw together a few ingredients, the mix and refrigerate. The preparation part takes so little time, close to 10 minutes.
What’s in this fudge recipe?
This healthy fudge recipe uses cashew butter mixed in with coconut flakes, the flavor combo is irresistible. This delicious cashew butter is from the brand Maisie Jane’s and is thick and creamy! There are also great brands of butter like Artisana Organics which make delicious cashew butter.
This cashew butter is mixed with coarsely ground coconut flakes and sweetened with maple syrup. The addition of flavors like rose and cardamom gives this dessert a rich luxurious taste. The mixture is then topped with flavored melted white chocolate. This recipe can make a great Valentine’s Day treat, or a great treat for any special occasion.
How to make this fudge recipe?
Mix the coarsely ground coconut mixture in a bowl with maple syrup, cashew butter, salt, cardamom powder and rose essence. Combine everything well. Layer a square pan with parchment paper and layer the coconut mixture on top of the parchment paper and press well to make a thick layer.
Place in the refrigerator. Melt white chocolate chips using a double boiler. (Make sure the water is not boiling hot, but simmering, else this brand of chocolate chips will curdle)
As the chips melt, add thick coconut milk from the top of the can, and a few strands of saffron.
Mix everything well and once it has a smooth consistency, take it off heat and add rose extract. Mix well. Take the layered coconut mixture from the refrigerator and add the melted white chocolate on top to create another layer.
Refrigerate for 2- 3 hours and enjoy!
(Optional – you can also top with this fudge with nuts of choice, like silvered pistachios). I used some flower jellies to decorate and make them look beautiful.

Ingredients
- 3 cups unsweetened coconut flakes blended into a coarse mixture (blended mixture comes to a one and a half cup)
- 1/4 cup maple syrup
- 1/4 cup cashew butter
- pinch of salt
- 1/4 tsp. cardamom powder
- few drops of rose essence
- a pinch of saffron
- 1 cup white chocolate chips (lily's brand of white chocolate)
- thick coconut milk (from a can refrigerated overnight)
Instructions
Put the coarsely ground coconut mixture into a bowl.
Add maple syrup, cashew butter, salt, cardamom powder and 2- 3 drops of rose essence.
Combine everything well.
Layer a 6-inch square pan with parchment paper. Grease well
Layer the coconut mixture on top of the parchment paper and press well to make a thick layer. Place in the fridge.
Melt white chocolate chips using a double boiler. (Make sure the water is not boiling hot, but simmering, else this brand of chocolate chips will curdle)
As the chips melt, add 1/4 cup thick coconut milk from the top of the can, and a few strands of saffron.
Mix everything well and once it has a smooth consistency, take off flame and add 3 drops of rose essence. Mix well.
Take the layered coconut mixture from the refrigerator and add the melted white chocolate on top and create a layer.
Refrigerate for 2- 3 hours and enjoy!
Notes
This is made using the healthier brand of chocolate from Lily's sweets, you can also use other brands of white chocolate chips.
