Chia Pudding makes a perfect make ahead simple breakfast or a quick sweet fix, it feels light and nourishing. This is one of my favorite chia pudding recipes, the flavor of the raspberries, the creaminess of the pudding makes it a delicious treat.
Not only are Chia seeds easy to prepare, but they are also packed with antioxidants, fiber and omega-3 fatty acids. This makes the pudding a really healthy meal or snack option.
I like to add some hemp hearts, cashew butter and walnuts as toppings, addition of cashew butter takes the deliciousness up a notch. You can add any milk of choice, I used oat milk which makes the berry chia pudding very creamy. Here is a recipe for homemade oat milk.
I made berry compote to mix with the chia pudding but you can also blend the raspberries, vanilla, maple syrup and raspberries and then add to the chia oat milk mixture. I make the compote by cooking fruits with sweetener, and water. If you don’t have raspberries, you can use berries of choice. Strawberries make a great option too! The refreshing flavors of the berries is the perfect morning mood-booster, making it a power packed, luxurious breakfast.
How to make this Berry Chia Pudding.
Gather all the ingredients. Place the raspberries, vanilla essence, maple syrup, salt and water in a saucepan. Heat over medium heat until the mixture starts to bubble. Stir constantly until the fruit breaks down, reduce the heat and simmer the fruit in low heat for a few minutes (7-8 minutes) until it is thickened.
Let the mixture cool down. Place the chia seeds in a mixing bowl and add the milk. Mix well. Add the cooled-up raspberry compote to the chia milk mixture and mix well.
Cover and refrigerate until thick pudding like consistency, why typically needs about 1.5 -2 hours. Serve with toppings like walnuts, hemp seeds and raspberries.

- 1 cup oat milk (or desired plant milk)
- 2 tbsp. maple syrup
- 1/2 tsp. vanilla extract
- 2 tbsp. water
- a pinch of salt
- 1 cup raspberries (or berries of choice)
- Optional toppings (raspberries, hemp seeds, cashew butter, walnuts)
Instructions
- Place the raspberries, vanilla essence, maple syrup, salt and water in a saucepan.
- Heat over medium heat until the mixture starts to bubble.
- Stir constantly until the fruit breaks down, reduce the heat and simmer the fruit in low heat for a few minutes (7-8 minutes) until it is thickened.
