A superfood, decadent dessert that is incredibly nutritious as well, and that everyone including kids would happily gorge on? It sounds too good to be true right? Well, this is it! My dessert-loving kid even remarked that she wants it everyday!
Contrary to what we may think, the pudding is not overpowered by the taste of the avocados. The avocado taste is subtle and is masked by the taste of cocoa powder.
I love this pudding. It is so easy to make, so healthy and is a dessert bomb. You get a happiness kick from eating all that good food. Whip it up when you are in a hurry or when you feel lazy and don’t want to move a bone in your body.
Ingredients in this Avocado Chocolate Pudding
Why is this Avocado chocolate pudding healthy as well as delicious?
Unsweetened cocoa powder: Cocoa powder gives this pudding a rich, decadent flavor. According to this Healthline article, Cocoa is rich in polyphenols, which have significant health benefits, including reduced inflammation and improved cholesterol levels. Its is a mood booster, reducing stress levels and increasing well-being. I used the Kiva Raw Organic Cocoa powder made with quality ingredients, USDA certified and containing no fillers or additives.
Avocados: Avocados are a highly nutritious fruit, packed with healthy fats and loaded with antioxidants. They impart a rich, creamy texture to this avocado, chocolate pudding. It is always good to use freshest of avocados for this recipe. But even if you have avocados that have slight brown spots, you can use them up for this recipe. The cocoa powder will mask the colors and no one will know!
Pure maple syrup: Use a high quality, pure maple syrup in this recipe for sweetness. Alternatively, you can also use sweetener of choice, like this Just Date Syrup.
Coconut milk: Here I used thick creamy coconut milk to blend everything. Refrigerate (not freeze) one can of coconut milk overnight in the refrigerator and use the thick cream at the top for this recipe. You can also use any other milk of choice.
